Prepare the vegetables:
- Wash, peel, and cut the pepper into strips,
- Peel the potatoes and cut into thick slices (leave
them to soak)
- Cut the aubergines into half slices (keep them
in water and salt until you use them)
- Cut the garlic into thin slices and chop the spring
onions
- Peel the artichokes and cut into quarters (put
them to one side and place them in water and vinegar
to stop them from changing colour)
- Chop the beans.
- Shell the peas and take the skin off the tomato
2. to make the sofrito (fried mixture of ingredients)
- Put a generous amount of oil into the pan and
fry the following ingredients in the same order:
- Potatoes
- Peppers
- Spring onion and garlic, stir 2 or 3 times and
add the vegetables one at a time, except for the
tomato
- Leave it to fry on a low flame for 15 minutes
- Make a space in the middle to add the tomato
and fry it.
3. add the paprika, saffron, and water. Leave
it to boil for about 10 minutes.
4. add the rice, leave it to boil for 15 minutes
and add the tuna
5. add the juice of a lemon to stop it from becoming
darker in colour
6. remove from the heat and leave it for a few
minutes before serving
