250g kidney beans
200g rice
5 morcillas (blood sausage)
1 strip of fresh streaky bacon
Pig´s tail and ear
Salt, saffron and water
Preparation
Leave
the kidney beans to soak the day before. Put the
kidney beans, bacon and pig´s tail and ear
into a pan, covering them with cold water. Bring
to the boil and leave it to simmer for 2 hours.
Next, add the rice and leave it to boil for 15 to
20 minutes. When the rice is almost done, add the
morcillas (do not add them any earlier in case they
come apart) and the crushed saffron. Check to see
whether it needs salt and let it cook. It should
be served very hot without letting it dry out.
